Ginger Cookies

Can you believe it? Two posts in one day? Well, it is a snow day, so Alexa and I haven't left the house all day (except to go outside for 10 minutes to play in the snow.) I took this opportunity to make some ginger cookies. I have enjoyed ginger cookies from the Seattle's Best cafe in our Border's Books, and have wanted to try and make some myself. They are the chewy kind with bits of crystallized ginger in them. I used this recipe from the Allrecipes site. I used 1 stick of butter plus 1/4 cup Crisco, because I didn't have margerine. Then at the end I added 1/2 C of crystallized ginger all chopped up. They are really yummy..

They look really, really yummy! and they are another of Jay's favorites! I always use all butter just because I never buy the other two!

Looks like Alexa enjoyed her excursion in the snow! I got to make several trips into town! It was a lot more fun in the morning than the afternoon! No one on the road and by afternoon they were all getting really glarey!

Brandy the cookies look so good! I love the crispy little ones from Trader Joe's because they have the little ginger bits in them as well...they call them Triple Ginger. I will make these as soon as my stomach stops being naughty. However ginger is good for the stomach........
